Easy make Sponge Cake

This recipe is from a site that we discovered on line a while ago. It claimed that it was an easy cake and even kids could make it. The original recipe can be found here... http://www.bestrecipes.com.au/recipe/Sponge-Cake-L579.html We make a few of them and the only trouble we had was our oven was a little hot for the cakes and browned them a bit . If you saw a cake i made on face book the other day you will see what they come out like.

Sponge cake

Serves 8
Preparation time: 15 - 30 mins

A light and fluffy cake that is often served filled with jam and cream.

Ingredients:

1 cup cornflour
3/4 cup caster sugar (we used icing sugar)
2 tsp plain flour
1 tsp cream of tartar
1/2 tsp bicarbonate of soda
4 large free range eggs, separated
Pinch salt

Method:
Sift cornflour, plain flour, cream of tartar and bicarbonate of soda three times. Beat egg whites and salt until stiff. Gradually add sugar and beat until quite stiff. Add egg yolks and beat until thick. Fold in the flour mix. Pour mixture evenly into two greased and lined round tins. Bake for 20 - 30 minutes at 180C.

Blondies Recipe
Ingredients
•1/2 cup of butter, melted
•1 cup of tightly packed dark brown sugar. I substituted raw caster sugar and it was just as good
•1 free range egg, lightly beaten
•1 teaspoon of vanilla
•1/2 teaspoon baking powder
•1/8 teaspoon of baking soda
•Pinch of salt
•1 cup of all-purpose flour
•1/2 cup dates snipped with scissors

Method


1 Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.

2 Add the egg and vanilla extract and whisk.

3 Add the flour, baking soda, baking powder, and salt, mix it all together. Add the dates.

4 Pour into the pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Cut into squares and serve.

Makes 9 blondies.
